A Journey to Kalamata:

In April 2026, OLISTIKA HOUSE had the privilege of visiting the Bouzalas family olive grove in a small village in the Peloponnese Peninsula, Greece—the birthplace of some of the world's finest extra virgin olive oils.
This immersive experience offered a rare opportunity to explore every stage of high-polyphenol olive oil production, from sustainable cultivation practices and harvesting methods to milling techniques, quality control, and sensory evaluation.
Our journey extended far beyond the olive grove.
In Kalamata, we had the honor of learning directly from Nikos Koutsoukos, an internationally recognized olive oil expert, chemist, educator, and international olive oil judge with more than 35 years of experience in the field.
Through in-depth training sessions, we explored the science behind high-polyphenol extra virgin olive oil, including the role of olive oil polyphenols such as hydroxytyrosol, oleocanthal, and oleacein.
We gained valuable insights into how factors such as olive variety, terroir, harvest timing, extraction methods, and storage conditions influence polyphenol concentration, oxidative stability, sensory characteristics, and overall olive oil quality.
We also learned how to evaluate extra virgin olive oil through professional sensory analysis—understanding the balance of fruitiness, bitterness, and pungency, which are often indicators of freshness and high phenolic content.
